1 Week 51 Gemakskrat Vega Dear Krat Chef, Nog een weekje en dan duikt Nederland weer onder voor gezelschapsspellen, pyjamadagen, Netflixen en binge-koken. Met ons Kerstkrat ben je met het laatste trouwens niet veel tijd kwijt: vrijwel alle spullen heb je dan overzichtelijk bij elkaar, en (het meeste werk, vinden wij altijd zelf) je hoeft geen menu te verzinnen! Ga er maar aan staan: een diner organiseren waar zowel je kleine nichtje als je vleesetende zwager content mee is. Enfin, voor die tijd doen we nog even gewoon, met zuurkool bijvoorbeeld. De Nederlandse zuurkoolproductie begon in augustus. Toen kwamen de witte kolen van het land, werden ze gesnipperd, en in bakken met zout gelegd. Na enkele dagen ontstaan dan melkzuurbacteriën. De kool fermenteert en wordt zo zuur. Oogsten in augustus was trouwens rijkelijk laat: door de droogte en de hitte toen groeiden de kolen langzaam. Wij zeggen: klein, maar fijn. Proef maar. Put on a pan of salted water. 2. Peel the celeriac, sweet potato and root parsley and cut into cubes. Boil until cooked for minutes. 3. Preheat the oven to 200 C. 4. Chop the onion. Heat oil in a pan and fry the onion until shiny. Meanwhile, peel the yacon (the one with black, muddy skin) and cut into small 0.5cm cubes. 4. Drain the sauerkraut in a sieve. Add to the onion together with the thyme, pepper, salt, yacon and raisins, and heat. 5. Roughly chop the walnuts. Slice up the camembert. 6. Mash the vegetables once cooked with the butter, milk and mustard into a coarse puree. Season with pepper and enough salt. 7. Spoon into an oven dish and cover the bottom with it. 8. Top the sauerkraut with the walnuts and camembert. Sprinkle with some pepper and put in the oven for about 10 minutes or under the grill until the cheese is golden brown. PS the yacon is also called the apple root.
