8 2 ZEEGROENTEN (SEA VEGETABLES) ( me=titel&id=280) Lamsoor, zeekraal, zeebiet en zeekool als dagelijkse kost? Vroeger werd erom gelachen. Tot in de laatste decennia van de twintigste eeuw berichten over de gezonde eigenschappen van zeegroenten en zeewieren uit Japan kwamen overwaaien. Een aantal ervan maakte hun opwachting als delicatesse, maar zijn inmiddels gemeengoed aan het worden. Behalve bij de groentespecialist treft men ze ook aan bij de beter gesorteerde visspecialisten. Vroeger stonden de schorgroenten in Zeeland bekend als armeluisvoedsel. In het voorjaar en de vroege zomer werden de zilte groenten door omwonenden gesneden. Tegenwoordig vindt men zeeaster, in Zeeland lamsoor genoemd, en zeekraal vooral in visrestaurants op de menukaart. Ook zeesla en zeekool passen koks - en niet alléén Zeeuwse - al langer toe in een aantal van hun gerechten. Met goed resultaat, want de gasten eten het graag. Sinds jaar en dag groeien op de Zeeuwse schorren wilde gewassen die als delicatesse worden beschouwd. Deze schorgroenten houden ervan regelmatig met zout water overspoeld te worden. Doordat er steeds minder schorren zijn, dreigen deze smakelijke groenten voor de menselijke consumptie verloren te gaan. De vrij grote vraag naar de groenten en de behoefte aan nieuwe landbouwproducten zette de Stichting Mariene Cultures Oosterschelde jaren geleden al tot onderzoek aan. Naar een biologisch verantwoorde commerciële teelt van zeeasters, zeekraal, zeebiet en zeekool. Ook uit andere landen en met name Frankrijk worden zeegroenten, onder meer zeeaster en zeekool inmiddels dagvers en geconditioneerd verpakt, geïmporteerd BINNENDIJKSE TEELT IN NEDERLAND De buitendijkse gebieden, de schorren, waar de lamsoor en zeekraal voorkomen, worden steeds schaarser. Deze gebieden hebben, doordat ze te maken hebben met het tij, een heel speciaal milieu. Ze vallen bij eb droog en worden met vloed steeds weer overspoeld met zout water. Door de uitvoering van het Deltaplan, in de tweede helft van de twintigste eeuw, is het areaal schorren uitgedund. Door vervuiling moet de oogst op de schorren langs de Westerschelde worden afgeschreven. Verder worden de resterende schorren in toenemende mate tot beschermd natuurgebied verklaard. Hierdoor wordt het wild snijden in het voorjaar en de vroege zomer aan banden gelegd. Alleen de schorren in de Oosterschelde leveren nog geschikte groenten. De vraag naar zeeaster (lamsoor) en zeekraal is door deze oorzaken doorgaans vele malen groter dan het aanbod. Vanuit de mosselhandel kwam de vraag naar de mogelijkheid om schorgroenten ook binnendijks, dus niet op de schorren, te telen. In 1981 werden de eerste initiatieven genomen om te komen tot een experiment. In de Bathpolders op Zuid-Beveland is op een perceel met kleine akkertjes vier jaar lang zeeaster gekweekt. De akkers waren omgeven door greppels en een dijkje en werden regelmatig onder water gezet, zodat er als het ware een kunstmatige eb en vloed was. Dat is nodig omdat de zeeaster regelmatig met zout water overspoeld wil worden. Enige jaren later kwam men met een teeltadvies: voor iedere boer die zeeaster wil kweken staat op papier hoe hij dat het beste kan doen. Er was op dat moment echter nog niets gedaan aan de veredeling. Iedereen die de plant wil kweken, moest zelf het schor op om zaad te verzamelen. De kweker in spé moest zelf selecteren, door planten die niet goed zijn er uit te wieden. Voor de kweker brengt dat economisch gezien een groot risico met zich mee. Om de teelt economisch rendabel te kunnen maken, moest er eerst verdeling worden toegepast en dat er via de normale kanalen zaad beschikbaar kwam. Een paar jaar geleden werd het voorstel gelanceerd om op het voormalige werkeiland Neeltje Jans een proefveld voor de teelt van schorgroenten aan te leggen. Dat stuitte op bezwaren en de Provinciale Waterstaat stelde voor de proef op Schouwen te doen in een gebied met zogeheten zoute kwel. Onder de dijken door sijpelt zout water de sloten in. De gebieden bij de dijken zijn dus zout, en eigenlijk alleen maar geschikt om er gras op te laten groeien. Het opzetten van kwelschermen zorgt er wel voor dat een gedeelte van de bodem tegen verzilting wordt beschermd, maar ze voorkomen niet dat een streep land veel zouter wordt en voor de landbouw verloren gaat. Er werd subsidie verstrekt om een proefveld op Schouwen aan te leggen om te kijken of er op die stukken land misschien mogelijkheden zijn voor de teelt van schorgroenten. De Rabobanken rond de Oosterschelde ondersteunden de Stichting, omdat de leden/ondernemers er belang bij kunnen hebben. Ook het Projectenfonds van Rabobank Nederland leverde een financiële bijdrage aan de Stichting, omdat het

9 project als een innovatieve ontwikkeling op het gebied van landbouwgewassen werd beschouwd. Diverse universiteiten (Gent, Brussel en Lissabon) werden bij het project betrokken. Als eerste werd onderzoek opgestart naar de veredeling van de zeeaster en naar een aantal teeltechnische aspecten, waaronder de minerale voeding. In mei 1997 werden de eerste zeeasterplanten uitgezet. Pas een jaar na de bloeitijd in het najaar kon verder zaad worden gewonnen. In het experiment werd tegelijkertijd ook onderzoek gedaan naar de mogelijkheden van zeekool, zeebiet en zeekraal. Zeeaster, ofwel lamsoor, kan - in tegenstelling tot zeekraal - goed leven zonder zout water, al zijn de jonge blaadjes dan niet echt eetbaar. De lamsoor krijgt juist door het zout haar smaak. Zeekraal echter stelt, hoewel het een pioniersplant is, veel hogere eisen aan zijn milieu. Om te kunnen leven moet de zeekraal heel regelmatig met zout water overspoeld worden. BEPERKTE MOGELIJKHEDEN Door het onderzoek naar de teelt van zeeaster (lamsoor) en de beperkte in formatie die ook uit het buitenland beschikbaar is over de teelt van zoute groenten, is al wel duidelijk geworden, dat de teelt van zeegroenten nooit op grote schaal in ons land zal kunnen plaatsvinden. Geen enkel waterschap in Nederland zal namelijk het risico willen nemen de binnendijkse grond te laten verzilten, omdat de grond dan ongeschikt kan worden voor de landbouw. Het ziet er niet naar uit dat de schorgroenten in grote partijen zullen worden aangeboden in de Nederlandse handelskanalen. Daarvoor zijn er sowieso al te weinig locaties in Nederland, die geschikt zijn voor de teelt van deze zoute groenten. Slechts enkele gebieden aan de zuidkust van Schouwen-Duiveland en op Tholen lijken in aanmerking te komen voor de teelt van schorgroenten.. Dagelijkse kost worden de lamsoor, de zeekraal, de zeekool en de zeebiet dus waarschijnlijk niet, maar de schorgroenten zullen wel op de menukaarten te vinden blijven Omdat de Stichting Mariene Cultures heel benieuwd was naar de mogelijkheden om de schorgroenten ook onder subtropische omstandigheden te telen, werd samenwerking gezocht met de universiteit van Lissabon, dat onderzoek hiernaar deed. Het probleem van verzilting speelt namelijk heel sterk in tropische en subtropische gebieden. 'In Egypte, Oman, Pakistan en India waar met behulp van irrigatie gewassen zijn gekweekt is de grond door de bevloeiing verzilt. Er hoeven maar minieme spoortjes zout in het water te zitten en op den duur krijgen de boeren problemen met de teelt van allerlei landbouwgewassen. Er werden op die zoute gronden vervolgens alleen maar veevoedergewassen geteeld. De ijzer-, eiwit- en vitaminerijke schorgroenten kunnen mogelijk een belangrijke rol gaan spelen bij de toekomstige voedselvoorziening in die gebieden. Onderzoek daarnaar is ook heel duidelijk één van de doelstellingen van de stichting. ZEEKRAAL (fr; Salicorne) FOR ENGLISH VERSION SEE:

10 Zeekraal is, als uitgesproken zoutplant, de pioniersplant van de kweldervegetatie. Hij kan groeien op slikkige platen die met elk hoogwater worden overstroomd. Zeekraalbegroeiing versterkt het opslibben en zorgt er zo voor dat de kwelder hoger en droger wordt. Omdat zeekraal goed tegen zout in de bodem kan en lekker smaakt, wordt hij als zilte zeegroente geteeld op gronden met veel zoute kwel. Met het water neemt zeekraal ook zout uit de bodem op. Teveel zout verstoort de groei. Om de zoutopname zo klein mogelijk te houden is zeekraal ingesteld op een miniem waterverbruik. De plant gaat verdamping tegen door een gering bladoppervlak en een dikke huid. Daarnaast vormt de plant een zuurstoflaagje rond de wortels waardoor zouten en schadelijke metalen niet in de plant kunnen komen. Toch komt er nog te veel zout de plant in. Dit wordt zoveel mogelijk opgeslagen in de oudste (onderste) bladdelen van de plant, die vervolgens afsterven. Je ziet dan ook dat de onderste bladdelen vergeeld zijn, terwijl de top van de plant frisgroen van kleur is. Ook het schorrenkruid bezit een dergelijke aanpassing. Er komen in Nederland twee soorten zeekraal voor. De langarige zeekraal groeit vooral in de getijdenzone. Deze soort heeft een functie in de aanslibbing van de kwelders. Tussen de planten komt het zeewater tot stilstand zodat kleideeltjes naar de bodem zinken. Zo komt de wadbodem hoger te liggen en kunnen andere soorten planten zich er vestigen. De andere soort, de kortarige zeekraal, is meer een plant van binnendijkse zilte terreinen. Crambe maritima (common name Seakale) is a halophytic perennial plant in the genus Crambe that grows wild along the coasts of Europe, from the North Atlantic to the Black Sea. It has large fleshy glaucous collard-like leaves and abundant white flowers. The seeds come one each in globular pods. Seed dispersal is achieved in part by the entire plant forming a tumbleweed.[1] The plant is sometimes grown as an ornamental but its most common use is as a blanched vegetable. Along the coast of England, where it is commonly found above High Tide Mark on shingle beaches, local people heaped loose shingle around the naturally occurring root crowns in springtime, thus blanching the emerging shoots. By the early 18th Century it had become established as a garden vegetable, but its height of popularity was the early 19th Century when seakale appeared in Thomas Jefferson's Garden Book of 1809, and it was served at the Prince Regent's Royal Pavilion in Brighton. The shoots are served like asparagus: steamed, with either a bechamel sauce or melted butter, salt and pepper. It is apt to get bruised or damaged in transport and should be eaten very soon after cutting, this may explain its subsequent decline in popularity. However, given a rich, deep and sandy soil, it is easy to propagate and grow on from root cuttings available from specialist nurseries. Blanching may be achieved by covering it with opaque material or using a deep, loose and dry mulch. Seakale is more commonly used in Europe and only rarely grown in the United States. Seakale should not be confused with seakale beet. Seawater holds key to future food By Julian Siddle Science reporter, BBC News ( Edible plants can be found along the coastline Salt and freshwater mix in river estuaries Growing crops in salt water is becoming necessary to overcome shortages of fresh water, say researchers writing in the journal Science. They suggest the domestication of wild plants that grow in salty conditions could help reduce global food shortages. Only 1% of the Earth's water is freshwater. Around the world, many agricultural areas are becoming less productive as salt levels in water supplies increase. "Salinisation is irreversible," says Professor Jelte Rozema from the department of systems ecology at the Free University, Amsterdam, in the Netherlands. "Sooner or later mankind has to accept the world is becoming more saline."

12 The scientists say we will have to make use of salty environments for agriculture. Farmland is becoming increasingly salty as global sea levels rise, but plants which already thrive in salty areas may provide a ready food source. Wild plants Future crops could come from plant species that grow in brackish water, around the mouths of rivers, where salt and freshwater mix, say the researchers. The rising cost of bringing in freshwater to irrigate traditional crops may force producers to turn to salt water agriculture. "We have limited amounts of freshwater - most of it is used for drinking water. Gradually it will be profitable to think of brackish water and sea water as a resource." said Professor Rozema. The scientists suggest the best way forward is to domesticate wild plants, crossbreeding them to produce higher yields. Plants such as sea kale and asparagus-like samphire, which grow along the coast in many countries have been eaten for thousands of years, but it is only recently that their potential has been seen as a substitute for more traditional commercial crops. In The Netherlands sea kale is now farmed commercially and finds a ready market says Professor Rozema. "There's a company cultivating it on shingle beaches, its a big success in the Netherlands, people like to get new vegetables, they know sea water is not bad for them." Biofuel bonus The researchers say plant breeders also need to look at domesticated plants that are salt tolerant, spinach and beetroot are closely related to samphire, and crops such as sugar beet can grow well in salty conditions. "Its a salt tolerant plant, this salt tolerance has not been reduced during domestication." said Professor Rozema. Genetic modification experiments have been conducted for more than 30 years to try to make crops such as wheat or rice salt tolerant. But the scientists say trying to induce salt tolerance has so far proved impossible. They now believe the genetic manipulations necessary to achieve this may too complex to be achieved at present. The researchers also say some species of plants currently growing in salty environments could have a future use as biofuels. They cite one particular type of samphire, the seeds of which produce more oil than soya beans or sunflowers. The plant grows well on subtropical desert coasts. Due to overproduction, of the traditional crops, resulting in lower prices, there is a need for new products. Cultivation (farming) of saline crops offers an alternative for traditional crops. The production of the new crops takes place on saline or brackish soils. These soils produce usually traditional crops, but the harvest is sub-optimal due to increased salinity levels. By replacing less economical crops with a more exclusive and hence, more profitable crop, the farmers income may increase. The production system for these crops offers new perspectives in coastal areas. A problem in these areas is the separation of fresh water from saline seepage. The production system under study with its new irrigation techniques offers a strict separation, thus creating a new instrument for efficient land use management. In tropical and subtropical areas, where salinasation threatens the use of arable lands, there is a growing need to cultivate salinized areas. Also in this situation the cultivation of salinecrops may increase agricultural production. In this project, three experimental fields are to be used, one in the Netherlands (province of Zeeland) and two in Portugal (Aveiro and Leziria Grande, near Lisboa). All three fields are equipped with an experimental irrigation system in order to cultivate saline crops. Plant breeding, plant eco-physiological, plant productivity, soil nutritional and cultivation studies are performed in these fields. The aim is to develop a cultivation technique for saline crops and the selection of an economically interesting variety of the species under study. Four salt plants are studied: Aster tripolium, Salicornia spp. crambe maritima, and Beta vulgaris ssp.maritima.

The company started in 1999 as a spin-off from EC research (AIR3 and Phare) and research at the university of Brussels on domestication of saline plants. Saline plants like Salicornia, Aster tripolium, etc. find their optimum growth at salt levels of 25 g/l (other plants at 5g/l). They generally grow better in other harsh environments as well and they take up more elements from the soil than traditional plants. Because of their specific characteristics, saline plants can be used as a sustainable solution for a range of environmental issues. They can be used as pioneering vegetation for restoration of soils, for phytostablisation of sludge dumping sites - possibly with biomass-for-energy production. Fish farm wastewaters can be used for irrigation of saline cultures, thereby reducing the load of the wastewater and producing a profitable crop. Saline plants offer possibilities for agriculture in marginal areas, e.g. where only brackish water is available for irrigation. 15 - Consultancy services for sustainable applications of saline cultures - Production of sea vegetables, animal feed and raw material for industry (e.g. cosmetics) So far, the activities have been focussed on breeding, seed selection/production and commercial production of sea vegetables for the consumer market (e.g. salicornia or sea aster). The company has a broad knowledge base on saline plants, seed production and start up of cultures, but lacks the engineering & project management skills and the knowledge of e.g. environmental regulations that is required to further develop its activities.
