3 EDITORIAL Met deze uitgave, opnieuw boordevol nieuws en uiterst smakelijke aanbevelingen, opent de vereniging Jeunes Restaurateurs d Europe ook deze keer weer de wereld van de haute cuisine voor haar leden en tafelgasten. Al zes jaar lang is T een internationaal en veeltalig ontmoetingspunt van vooruitziende gastronomie waar tafelgenoten, chefs, sommeliers en ondernemers uit twaalf landen gezamenlijk kunnen genieten van de nieuwe Europese culinaire cultuur, die ondanks de huidige crisis, maar dankzij het enthousiasme, de kennis en de inzet van jonge vakmensen, waaronder de leden van JRE een van de meest bloeiende en inspiratievolle momenten beleeft. Een goed voorbeeld hiervan zijn de winnaars van de prijzen van het Internationale J Congres 2013, waarop uitgebreid wordt ingegaan tijdens een groepsinterview. 6 Jeunes Restaurateurs d Europe De basis van de culinaire toekomst Jeunes Restaurateurs d Europe THE ROOTS OF GASTRONOMY S FUTURE The association Jeunes Restaurateurs d Europe (JRE) includes young gastronomy professionals from twelve countries and counts among its ranks more than 300 of our continent s best and most innovative restaurants. JRE s origins go back to the nineteen seventies, when the visionary Nicole Seitz, then Grand Marnier s Head of Public Relations, had the idea of creating a means by which the new French chefs who sacrificed so much to this marvellous profession (whilst at the same time representing its future) could exchange knowledge and experience. In 1974 Jacques Marnier-Lapostolle, the famous liqueur manufacturer s President, turned this dream into reality by creating Jeunes Restaurateurs de France (JRF). Within a few years it exceeded a hundred members, and in the nineteen nineties Jeunes Restaurateurs d Europe (JRE) is een vereniging van jonge restaurateurs uit twaalf landen en telt onder haar leden meer dan 300 van de beste en meest innoverende restaurants van ons continent. Ontstaan in de jaren zeventig, toen de visionaire Nicole Seitz, toentertijd hoofd Externe Betrekkingen van Grand Marnier, op het idee kwam om een manier te vinden waarop de nieuwe Franse chefs die zoveel over hadden voor dit schitterende beroep en tegelijkertijd diens toekomst vormden, hun kennis en ervaringen konden delen. In 1974 gaf Jacques Marnier-Lapostolle, directeur van het beroemde likeurhuis, vorm aan deze droom en stichtte Jeunes Restaurateurs de France (JRF). Binnen enkele jaren groeide JRF uit tot een vereniging met meer dan honderd leden en dit ongekende succes leidde in de jaren negentig tot de oprichting van een Europese vereniging, JRE. JRE rust op de passie en het talent van de leden, die hun krachten verenigen om de huidige vooruitzichten van de wereldgastronomie te vergroten en te verbeteren, een toekomst te zaaien voor de nieuwe generaties chefs, sommeliers en andere vakmensen uit deze sector (via talrijke cursussen en initiatieven, zoals de gastronomische jamsessions, waarin wordt geïmproviseerd met onverwachte ingrediënten om verrassende recepten te creëren) en, vooral, 06

7 om internationale kwaliteits- en servicenormen te creëren en te verbeteren om de klanten van de ondernemingen die deel uitmaken van dit unieke wereldnetwerk, te allen tijde opmerkelijke culinaire ervaringen te kunnen bieden. Om de twee jaar organiseert JRE een internationaal congres waar de talrijke leden bijeenkomen om culinaire en professionele ervaringen te delen, indrukken uit te wisselen over de situatie in de horecasector (voortdurend aan vernieuwing onderhevig dankzij de inzet, creativiteit en aspiraties van de nieuwkomers), elkaar beter te leren kennen en te genieten van de gastronomie en cultuur van het gastland. Het afgelopen congres vond half april jongstleden plaats in Salzburg, de geboorteplaats van Mozart. Enkele belangrijke evenementen waren het openingsdiner in het originele tapasrestaurant Carpe Diem Finest Fingerfood, een proeverij van etenswaren en producten van «Oostenrijkse smaak» in het charmante Gwandhaus en het eindgala in het vermaarde Festspielhaus. Een speciale vermelding verdient de uitreikingsceremonie van de JRE-prijzen voor uitmuntendheid in de horeca. Deze keer vielen de prijzen, gesponsord door diverse samenwerkingspartners van JRE, ten deel aan: Rolf Fuchs, van het Zwitserse restaurant Panorama (Talent van het Jaar, gesponsord door San Pellegrino); Marco Parizzi, uit Parma, die de Ondernemersprijs won (gesponsord door Diners Club International) voor het beheer van zijn restaurant Parizzi; Nils Henkel, van het Duitse hotelrestaurant Schloss Lerbach, die de door Nespresso gesponsorde Innovatieprijs kreeg; Mart Scherp, uit Nederland (Eco-prijs, gesponsord door Pommery); en de Oostenrijkse Maria Steffner, van restaurant Mesnerhaus, die de Sommelierprijs in ontvangst nam, gesponsord door Carpe Diem. its unprecedented success led to the creation of its European incarnation (JRE). JRE s pillars are the talent and passion of its members, who combine their efforts to broaden and improve the current horizons of gastronomy worldwide, sowing the seeds for future generations of chefs, sommeliers and other sector professionals (through numerous courses and initiatives such as gastronomic jam sessions, in which chefs improvise with surprise ingredients to create unusual recipes), and above all creating and improving international standards of quality and service so that customers of the establishments that form part of this unique global network will always enjoy noteworthy culinary experiences. Every two years JRE organises an international congress in which its numerous members meet to share culinary and professional experiences, exchange views on the state of the gastronomy sector (always in continual renewal thanks to the effort, creativity and restlessness of young blood), and get to know better the culture of the host country and taste its gastronomy. The last congress took place in the middle of last April in Salzburg, birthplace of Mozart. Significant events included the inaugural dinner in the original Carpe Diem Finest Fingerfood tapas restaurant, the Taste of Austria food and product fair in the charming Gwandhaus, and the closing gala in the famous Festspielhaus. A particular highlight was the ceremony to present JRE s awards, which recognise excellence in gastronomy. Sponsored by JRE s various collaborating partners, this year s prizes were awarded to: Rolf Fuchs, of the Swiss restaurant Panorama (Talent of the Year prize, sponsored by San Pellegrino); Marco Parizzi from Parma, who took the Prize for Best Entrepreneur (sponsored by Diners Club International) for his management of his restaurant Parizzi; Nils Henkel, of the German hotel/restaurant Schloss Lerbach, who won the Innovation Prize sponsored by Nespresso; Mart Scherp, of the Netherlands (Environmental Sustainability Prize, sponsored by Pommery); and the Austrian Maria Steffner, of the Mesnerhaus restaurant, who took the Sommelier Prize sponsored by Carpe Diem. 07

Talent and Passion What do you think about the new technical approaches to gastronomy? Rolf Fuchs (Talent of the Year Prize) The new cooking techniques result in an even more precise job and a qualitative improvement in the end product. But only those who best know the traditional preparation methods should employ them. Marco Parizzi (Best Entrepreneur Prize) It is odd that up till now so little has been said about what we put inside something as essential as food, which has been left to an oral tradition. But now, at last, we don t only talk about flavours but also about preparation processes, textures and the molecular changes of foods, with Dit zijn de winnaars van de JRE prijzen Hier volgt een beknopte beschrijving via een kort koraalinterview. Rolf Fuchs (Talent van het Jaar) De nieuwe kooktechnieken uiten zich in een nog nauwkeurigere uitvoering en een kwalitatieve verbetering van het eindproduct. Maar alleen degenen die de traditionele bereidingswijzen het beste kennen zouden deze moeten toepassen. Marco Parizzi (Ondernemersprijs) Het is opvallend dat er tot nu toe zo weinig werd gesproken over «de inhoud» van zoiets belangrijks als eten, overgelaten aan een mondelinge traditie. Tegenwoordig hebben we het gelukkig niet alleen over smaken, maar ook over bereidingsprocessen, texturen en moleculaire wijzigingen van voedingsmiddelen, met een wetenschappelijk tintje. Dit is een nieuwe grens die uiteraard iedereen boeit. Nils Henkel (Innovatie) Ik denk dat het belangrijk is om zich vertrouwd te maken met de moderne keukentechnieken en de samenhang van producten en de verwerking ervan. Er zijn technieken, zoals het koken op lage temperatuur, die een positief effect hebben op de kwaliteit van de producten. Mart Scherp (Eco-prijs) Dit zijn instellingen met een toegevoegde waarde, 14

15 zoals aanvullingen op de klassieke basis. Wanneer je weet hoe een product reageert op een bepaalde bereiding, kun je hier handig op inspelen om de materie goed te beheersen en tot een perfect eindresultaat komen. Voor mij is dat erg belangrijk. Maria Steffner (Somellierpijs) We voeren diepgaand onderzoek uit op het gebied van nieuwe kooktechnieken, we proberen ze uit en beslissen zelf wat we wel of niet willen eten. Het is van groot belang zo veel mogelijk kennis op te doen. Met name op het gebied van creativiteit spelen nieuwe combinaties een doorslaggevende rol, zowel wat betreft smaak als voedingswaarde. Daarom is het zinvol om op de hoogte te zijn van de nieuwste ontwikkelingen. Jouw gerechten lijken net kleine kunstwerken, met opvallende kleuren In hoeverre speelt de artistieke voorstelling van het eten een rol bij de smaakervaring? Rolf De visuele factor vervult samen met de voornaamste factor, de smaak, een uiterst belangrijke rol. Net als in de liefde, zijn uiteindelijk de innerlijke waarden belangrijker dan het uiterlijk... Maar niemand kan met stelligheid beweren dat hij niet graag flirt met schoonheid. Het restaurant Parizzi is al drie generaties lang een waar genot voor de bezoekers van Parma. Maar in plaats van op de lauweren van je familie te rusten, heb je het bedrijf uitgebreid met een klein hotel en een kookschool. Ben je van mening dat variatie en uitbreiding van het aanbod onontbeerlijk is om de crisis te overleven? Marco Vandaag de dag is diversificatie noodzakelijk. Was het bijvoorbeeld jaren geleden ondenkbaar dat een restaurant met twee Michelinsterren catering zou aanbieden, nu is het nodig om te kunnen overleven. Wij proberen ons dagelijks aan te passen, want het publiek heeft een slecht geheugen en de wereld gaat te snel om ons niet aan te passen. a focus on science. Nils Henkel (Innovation Prize) I think it is important to familiarise yourself with modern cooking techniques, the contexts of the products and their preparation. There are techniques such as low temperature cooking which have a positive effect on the quality of the products. Mart Scherp (Environmental Sustainability Prize) These are approaches which can add value to the classical foundations. If you know how a product reacts to a specific preparation, you can adapt in order to master the material and obtain a perfect end product, something that I consider to be very important. Maria Steffner (Sommelier Prize) We examine the new cooking techniques in depth, we test them and we decide for ourselves which to take and which to leave. It is very important to be as knowledgeable as possible. Especially in the sphere of creativity, new combinations are decisive, both regarding flavours and substances. Hence it makes sense to keep up-to-date. Your dishes look like tiny sculptures, with impressive use of colour. To what extent does the artistic appearance of food influence the gustatory experience? Rolf Together with flavour, which is most important, the visual factor plays a very significant role. As with love, in the end internal values count more than appearance. But no-one can claim that they do not enjoy flirting with beauty. The Parizzi restaurant has delighted three generations of visitors to Parma. But instead of resting on your family s laurels, you have gone further and added a small hotel and a culinary school. Do you think that diversification and expanding what you offer is essential to surviving the crisis? Marco Today diversification is essential. Years ago, for example, it would have been unthinkable for a Michelin two-star restaurant to do catering. But now it is essential to survival. We try to apply ourselves every day. The public s memory is too short and the world s progress is too quick for us not to adapt. Your cooking respects the characteristic flavours of the local products, at the same time as you manage to constantly adapt and surprise. What are your sources of inspiration? Wat zijn jouw inspiratiebronnen? Nils Mijn menu s zijn gebaseerd op regionale seizoensproducten uit de streek. Aan de ene kant is het altijd cruciaal om nieuwe speciale producten te blijven zoeken. Aan de andere kant is het belangrijk verwachtingen te scheppen rond het eten en de gasten te verrassen. Dit betekent de maximale smaak halen uit elk product, zowel door het spelen met texturen en temperaturen als door zure of pikante elementen. Er is een toenemende zorg voor het milieu. Welke aanpassingen heb je in je restaurant doorgevoerd om het tot een van Europa s meest milieubewuste restaurants te maken? Mart Aardig wat: weinig organisatorische lagen; veel eerlijke regionale streekproducten, al dan niet biologisch; het volgen van de seizoenen en de Viswijzer van het WWF; duurzaam inkopen; altijd de verschillende soorten afval scheiden; eerlijke schoonmaakproducten gebruiken; promotor van Zeeland en nieuwe ontwikkelingen in de streek; zoutreductie door gebruik van Oosterschelde water; experimenteren met milieu bewust gekweekte schelpdieren, vissoorten en zeewieren; besparing op energie door aanschaf van een Lohberger inductiekachel met ingebouwde peaksaver Waar gaat de professionele rol van sommelier naartoe? Denk je dat die in goede staat verkeert? Maria Een klant die van goed eten houdt zal zijn gerechten altijd met goede drank willen combineren. Tussen de keuken en de klant staat altijd de service en, in het bijzonder, de sommelier. Als de klanten vertrouwen in hem hebben, vertrouwen ze het totale aanbod. Voor ons staat vast dat dit beroep, deze rol, altijd zal blijven bestaan. Het is cruciaal dat elk van ons met enthousiasme en toewijding zorg draagt voor zijn taak. products in season in the region. We use environmentallyfriendly cleaning products. We promote Zeeland and the new developments in the region. We reduce salt through the use of water from the Oosterschelde estuary. We experiment with organic shellfish, fish and seaweed. We have saved energy by buying a Lohberger induction stove with a peaksaver system, and so on. What do you think is the future of the profession of sommelier? Do you think that it is in good health? Maria A customer who values eating well will always want fine drinks to accompany their courses. The waiters, and especially the sommelier, mediate between the kitchen and the customer. If the customers trust the sommelier, they will trust everything on offer. We are certain that this profession, this role, will always exist. The important thing is that everyone does their job with enthusiasm and dedication. 17
