Tijdens mijn opleiding heb ik op een avond de chef-kok vervangen van ons etablissement in Bordeaux, Château de Suduiraut. Ik serveerde de saus die bedoeld was voor het voorgerecht (een Sauterne-saus, van witte bordeauxwijn) bij een schotel met zeebaars. Ik was in paniek en wist niet wat te doen... Tot plotseling de gastvrouw en gastheer me kwamen zeggen dat de deelnemers in de eetzaal me wilden zien... Ze wachtten me op en ik kreeg een staande ovatie Het was totaal onverwacht, maar eind goed al goed!
