Ze werden met de hand uitgegraven in de flanken van de Spring Mountain tussen 1870 en 1880 door Chinese arbeiders. De rotswanden zorgen voor een natuurlijke klimaatscontrole met een constante temperatuur en vochtigheidsgraad, ideaal voor het verouderen van de wijnen.
