7 Praktisch voorbeeld: milde vet-rendering (Ten Kate Vetten + Gelita) Traditioneel renderingsproces Innovatief, mild scheidingsproces Hoge temperaturen -> hoog vet-rendement lage kwaliteit eiwitten (denaturated) Milde temperaturen -> hoge kwaliteit vetten voedsel-waardige eiwitten Hoog waterverbruik -> verlies van eiwitten hoge afvalwaterbelasting opgelost: isolatie van de eiwitten uit proceswater

Analyse relevant components + levels in the by-products. Use data from industries, literature or expert judgements. 3. Generate long-list of potential applications / markets: processed by-products or isolated components. Verify what has been tried before + reasons for failure. 4. Elaborate technological options + restrictions: basic technology options per listed idea basic estimate of feasibility & sustainability 5. Elaborate considerations for viability per idea: legal issues, food/feed safety existing processing facilities, logistics, market access advantage: what makes the idea feasible? 6. Selection of short-list of ideas by (industry) stakeholders: based on elaborations of above issues 7. Process & product development (follow-up R&D): keep in mind safety, sustainability, market / consumer acceptance develop strategy for production, marketing, growth,... stakeholder involvement conditions for success Changing external conditions (legislation, market situation,...). Prevent early involvement of end-users or technology suppliers (if they would narrow the search domain). Transform productiondriven system (common for a by-product) to market-oriented production. End-user involvement at product development stage: become a problem owner. Competitive advantage (price, added value,...). Access to existing processing equipment, logistic infrastructure and/or market access. Adequate strategy for start and growth of the new chain. practical examples BSE crisis stimulated sourcing of gelatin from alternative animal byproducts. Trader in commodity halfproducts has low interest in product with alternative properties. Producers of consumer products, however, can utilise specific properties for product innovations. Avocado oil production was developed by olive oil industry (using existing processing equipment and market access).
