Wij zijn uitermate trots dat wij deze dagen de crème de la crème van het wereldwijde hopgebeuren mogen ontvangen in onze mooie stad. Vier dagen lang krijgen jullie de kans om jullie volledig onder te dompelen in de wereld van hop en bier, samen met collega s van over de hele wereld. Een ideale gelegenheid om jullie licht op te steken rond nieuwe trends, ontwikkelingen en onderzoeken en vooral om ervaringen uit te delen. Wij hopen alvast dat de bezoeken aan onze lokale hoptelers en brouwerijen met de bijhorende degustaties een van de hoogtepunten worden van jullie verblijf. De hopteelt in onze streek heeft de voorbije jaren een nieuwe impuls gekregen. Als burgemeester en schepen van landbouw zijn wij uiteraard ontzettend blij met die evolutie en steunen we onze hoptelers en brouwers ten volle. 3 supporting poperinge s hop growers VZW HOP Welkom, ook vanwege vzw HOP Om de hopteelt in Poperinge een duw in de rug te geven, werd op 23 juli 1998 de Hop Overkoepelende Producentenvereniging vzw of vzw HOP opgericht. Als medeorganisator van dit hopcongres heet vzw HOP u van harte welkom! De 8 pijlers van onze missie De doelstellingen van de vzw HOP: de belangen van de hopteler bevorderen de problemen in de hopteelt bestuderen de beroepsbelangen van de hoptelers verdedigen studie- en vormingsactiviteiten inrichten voor de hoptelers kennisoverdracht in de hopsector naar derden in binnen- en buitenland activiteiten organiseren die bijdragen tot een verbetering van de sociale, economische en culturele toestand van de hoptelers de plannen om deze doelstellingen te bereiken, helpen bekostigen financiële hulp verlenen aan verenigingen en instellingen die het doel hebben de vzw te laten ontwikkelen. De vzw legt zelf de wijze van ondersteuning vast. Organisatie De Algemene Vergadering van de vereniging is paritair samengesteld. Ze bestaat uit vijf vertegenwoordigers van CV Pacohop en vijf vertegenwoordigers van de Nieuwe Hoptelersbelangengroep FV. Daarnaast zetelt ook een vertegenwoordiger van het Poperingse Stadsbestuur in de Algemene Vergadering. It is composed of five representatives of CV Pacohop, as well as five from the Nieuwe Hoptelersbelangengroep FV (New Hop Growers Interest Group). 4 Hopprofessor Denis Dekeukeleire Hop en bier in België: boeiende ontwikkelingen Hops and beer in Belgium: a fascinating tale Sinds de Middeleeuwen al, heeft België een uitstekende reputatie voor zijn bier. Bier is ondertussen een inherent deel geworden van de Belgische cultuur. De vele variëteiten in smaak en karakter weten kenners van over de hele wereld te bekoren. Met als gevolg heel wat boeiende initiatieven, onderzoek en nieuwe opportuniteiten. Het verleden en de toekomst van Belgisch bier en hop, door de ogen van hopprofessor De Keukeleire. Pionier in bieronderzoek In lijn met de steeds groeiende interesse voor bieren ontstonden de voorbije jaren heel wat vormingsinitiatieven voor brouwers. Zowel de overheid/ officiële onderwijsinstellingen als privépersonen organiseren opleidingen waar geïnteresseerden alle wetenschappelijke, technische en smaakvaardigheden ontwikkelen om een succesvolle brouwer te worden. Op deze brouwscholen staat, naast theorie, ook praktisch onderzoek op het programma. Voortbouwend op grensverleggende inspanningen uit het verleden, bestuderen verschillende groepen specifieke uitdagingen van het brouwproces. Op die manier ontstaat een groeiende kennis van dat brouwproces en de kwaliteiten van bier. Met andere woorden, België zet de toon op het vlak van bieronderzoek. Intensief hoponderzoek Ever since the Middle Ages, Belgium has enjoyed a great reputation for beer. Nowadays, beer has become an inherent part of Belgian culture. It is praised by connoisseurs from all over the globe for its varieties in flavour and character. Its success leads to loads of fascinating beer-related initiatives, research and new business opportunities. A chat with hop professor De Keukeleire about the past and future of Belgian beer and hops. Pioneer in beer research In line with the ever-growing interest in beer, many professional education programmes for brewers have been set up over the past few years. Belgian authorities/educational facilities as well as private persons organize training courses where beer lovers develop all the scientific, technical and sensorial skills needed to become a successful brewer. The brewing schools schedule technical courses and conduct practical research. Building further on groundbreaking efforts from the past, different groups study specific challenges related to brewing, which results in a gradual build-up of expertise on the brewing process and the qualities of beer. In other words: Belgium is at the forefront of beer research. Intensive hop research Belgium sets the tone in beer research Het Belgische mekka van hoponderzoek ligt in de stad Gent. Daar werd in het verleden intensief onderzoek verricht naar de belangrijkste kenmerken van hopchemie en naar de bittere smaak die hop in bier veroorzaakt. Vandaag is de stabiliteit van de biersmaak een belangrijk onderzoeksthema. Daarnaast werd de laatste jaren ook forse vooruitgang geboekt in biomedisch onderzoek naar hop. Doorheen de geschiedenis staat de hop bekend als een geneeskrachtige plant die een belangrijke bijdrage kan leveren aan het welzijn van de mens. Onderzoeken aan de Universiteit Gent leerden dat hop het sterkste fyto-oestrogeen bevat dat in de natuur te vinden is, het zogenaamde hopeïne. The city of Ghent is the Belgian mecca of hop research. In the past, intensive research has led to insights into the key characteristics of hop chemistry and of the hop-derived bitter substances in beer. Today, beer flavour stability is one of the key research topics. On top of that, great progress has been made in the biomedicinal research of hops. Hops have long been known as a medicinal plant, which largely benefits people s health. Research at Ghent University revealed that hops contain the most potent phytoestrogen in the plant kingdom, called hopein. Based on these insights, a hop extract has now been developed, called MenoHop, which smoothens >>> >>>

5 Op basis van die inzichten werd een hopextract ontwikkeld, MenoHop, dat de ongemakken en klachten van de menopauze verzacht. Het succes van dit voedingssupplement heeft de hopindustrie in de regio van Poperinge een nieuwe boost gegeven. Trend naar aromatisch Een tweede stimulans voor de Poperingse hopteelt kwam er dankzij het groeiende belang van het bieraroma. Door specifieke hopvariëteiten slim te combineren, kunnen brouwers tot verrassend originele smaken komen. Hopsoorten verschillen immers van elkaar door hun specifieke samenstelling: er zitten honderden vluchtige stoffen in hop die voor verschillende geuren en smaken zorgen. Naast de aanwezigheid of afwezigheid van die stoffen (de kwalitatieve samenstelling), is ook de kwantitatieve samenstelling van belang: hoeveel van die stoffen zijn er aanwezig. Trouwens, ook de terroir van de hop heeft een grote invloed op zijn appreciatie. Poperingse hoptelers focusten traditioneel op bitterhop. Daar kwam de voorbije jaren verandering in. De nieuwe inzichten rond de geneeskrachtige werking van de hop en de groeiende interesse van brouwers voor aromahop, zorgden voor een ommekeer. In 2012 was 45% van de hop die wereldwijd werd geteeld aromahop. Ook in Poperinge werd dat percentage bereikt (als we dual-purpose hop meerekenen). Ter vergelijking: vijf jaar eerder, in 2007, was 75% van de Poperingse hopteelt nog bitterhop. Dankzij deze recente evolutie kunnen de Poperingse hoptelers nu de vraag van alle brouwers inlossen. Kwaliteitscontrole en promotie Om het gebruik van Belgische hop te stimuleren, werken Inagro, vzw HOP en de Stad Poperinge nauw samen. Zo hebben ze een kwaliteitssysteem opgezet waarbij Poperingse hop uitgebreid wordt gecontroleerd, in elke stap van de productieketen. Zijn alle vereisten ingelost, dan krijgt de hop een kwaliteitscertificaat. Om de Belgische hop verder te promoten, werd samen met de VLAM (Vlaams Centrum voor Agro- en Visserijmarketing) en de vzw Vlaamse Hopregio ook een sensibiliseringscampagne uitgewerkt, die onder meer resulteerde in het hoplogo. Kortom: de Poperingse hopsector heeft duidelijk een nieuwe, vitale impuls gekregen. the discomforts and complaints related to the menopause. Tendency towards aromatic A second stimulus for Poperinge s hop growers is the increasing importance of the beer aroma. Brewers can create novel beer flavours by smartly combining specific hop varieties. After all, all hop varieties differ from each other in their specific composition: there are hundreds of flavour-active volatiles in hops that result in different flavours and smells. In addition to the presence or absence of these constituents (i.e. the qualitative composition), the quantitative composition is key too, i.e. how much of these constituents are present. Moreover, the terroir (local soil) of the hops plays a key role in their overall appreciation. Traditionally, Poperinge s hop growers have always focused on growing bitter hops. This has changed, however, in recent years, due to new insights into medicinal hops and the changing interest of brewers in aroma and flavour hops. In 2012, 45% of all the hops cultivated worldwide were aroma hops. In Poperinge, aroma hops also accounted for 45% of the 2012 crops (taking into account dual-purpose hops), while in 2007, 75% of the hops produced in Poperinge were still bitter hops. Thanks to this recent development, local hop growers are now capable of meeting all the requirements that brewers set. Quality control and promotion To stimulate the use of Belgian hops, Inagro, vzw HOP and the town of Poperinge are working closely together. They have established a quality assurance system to track and monitor the hops in every single step of the production chain. Hops that meet all the requirements are granted a quality certificate. Another recent initiative to promote Belgian hops is an awareness campaign launched in cooperation with VLAM (Flanders Agricultural Marketing Board ) and the vzw Vlaamse Hopregio, which resulted in the Belgian Hops logo. 6 Inagro Wat betekent Inagro voor de Belgische hopsector? What does Inagro do for Belgium s hop industry? Toen het Provinciaal Onderzoekscentrum voor Land- en Tuinbouw (POVLT) in de jaren 50 werd opgericht, was hop één van de eerste onderzoeksthema s. Op proefvelden in Poperinge en in de regio Asse-Aalst werd intensief onderzoek verricht naar de hopteelt. Doorheen de jaren breidde het POVLT uit, werden nieuwe teelten en onderzoeksthema s toegevoegd en werd het POVLT omgevormd tot Inagro. Praktijkgericht wetenschappelijk onderzoek naar de hopteelt blijft een belangrijke rol spelen. Daarnaast ondersteunt Inagro hopbedrijven met teeltbegeleiding en gerichte initiatieven zoals erkenning van gewasbeschermingsmiddelen, analyses, kwaliteitszorg en promotie. Teeltbegeleiding Een belangrijke pijler binnen de teeltbegeleiding is het systeem van waarnemingen en waarschuwingen tijdens het groeiseizoen. Via wekelijkse berichten worden de hoptelers gewaarschuwd voor aankomende insectengolven (voornamelijk bladluizen en rode spin) en ziekten (zoals Pseudoperonospora humuli). Zo kunnen ze tijdig en selectief ingrijpen. Deze acties kaderen binnen de principes van Integrated Pest Management (IPM) waar alle landbouwers vanaf 2014 verplicht aan moeten voldoen. Daarnaast volgt Inagro vanaf de tweede helft van augustus de afrijping van de hop op. Twee keer per week nemen ze op enkele praktijkpercelen stalen om het alfazuurgehalte van de hop te bepalen. Op basis van de resultaten beslissen de hoptelers over het ideale oogsttijdstip. Praktijkgericht onderzoek Elk jaar voert Inagro enkele praktijkgerichte proeven rond hop uit. Zo worden buitenlandse hopvariëteiten gescreend op hun groeipotentieel in de Poperingse hopregio. Er kunnen ook teelttechnische aspecten, zoals bijvoorbeeld When the Flemish Provincial Research and Information Centre for Agriculture and Horticulture (POVLT) was established in the 1950s, hops was one of its first research topics. The agency conducted intensive trials on hops in fields across Poperinge and in the Asse-Aalst region. Through the years, the POVLT broadened its horizons: new crops were trialled, new research topics were introduced and the POVLT became Inagro. Yet practice-oriented scientific research into hop cultivation has stayed key. In addition to conducting trials, Inagro also helps hop growers with guidance on crop production and other dedicated initiatives, such as the recognition of crop protection products, analyses, quality assurance and promotion. Guidance on crop production A main pillar within the concept of guidance on crop production is the system of observations and warnings during the growing season. Hop growers get weekly messages warning them of upcoming insect pests (especially plant lice and red spiders) and certain diseases (like Pseudoperonospora humuli), which helps them to respond quickly and selectively. These measures dovetail with the principles of Integrated Pest Management (IPM), which all farmers must adhere to from 2014 onwards. Besides that, Inagro also closely monitors the ripening of the crop, starting in the second half of August. Twice a week, they take samples on several of their trial fields to determine the alpha acid level in the hops. Based on these results, hop growers can decide on the ideal harvesting time. Practice-oriented research Inagro conducts several practice-oriented trials on hops per year. 7 Inagro: what s in a name? Practice-oriented scientific research into hop cultivation Inagro is een verzelfstandigd agentschap van de Provincie West- Vlaanderen dat instaat voor de uitvoering van het provinciale beleid inzake land- en tuinbouw. Het telt momenteel ongeveer 160 medewerkers en is actief in verschillende sectoren: akkerbouw, tuinbouw open lucht, tuinbouw onder afdekking, dierlijke productie en biologische productie. Naast innovatie, zorg voor milieu en landschap en aandacht voor buur en burger is wetenschappelijk onderzoek één van de hoofdpijlers in de missie van Inagro. Op proefvelden verspreid over West-Vlaanderen onderzoekt Inagro verschillende teelten. Op basis van de testresultaten adviseert Inagro de landbouwers rond allerlei thema s binnen de land- en tuinbouw. Inagro: what s in a name? Inagro is an autonomous agency of the Province of West-Flanders, responsible for implementing the policy of the province with regard to agri- and horticulture. Employing around 160 people, Inagro provides financial and technical support in different sectors: arable farming, open-air horticulture, horticulture with no protective cover, animal produce and organic produce. Besides innovation, care and concern for the environment and scenery and attention to neighbour and citizen, scientific research is one of the main pillars in Inagro s mission. Door het beperkte aandeel van hop in de Belgische landbouw worden beschermingsmiddelen voor hop die in naburige landen erkend zijn, hier immers niet makkelijk goedgekeurd. Inagro stelt daarom aanvraagdossiers op, in nauw in overleg met de andere Europese partners. Hoptelers kunnen daarnaast in het labo van Inagro terecht voor analyses op het alfazuurgehalte van de hop. Kwaliteitszorg en promotie Samen met de vzw HOP en de Stad Poperinge werkte Inagro in 2004 het kwaliteitszorgsysteem voor de Belgische hop uit, dat streeft naar garanties rond kwaliteit, voedselveiligheid en traceerbaarheid tijdens de teelt, de bewaring en het transport van de hop. Inagro ondersteunt hoptelers bij de toepassing van het kwaliteitshandboek. Bovendien voert het agentschap verplichte visuele kwaliteitscontroles op hop uit, in het kader van de Europese certificering. De voorbije jaren werden ook veel - succesvolle - inspanningen geleverd om de communicatie naar de Belgische brouwerijsector te optimaliseren. De website en het hoplogo zijn maar een paar voorbeelden van initiatieven die duidelijk vruchten afwerpen (zie verder in deze brochure). shoot killing. With only a limited number of hop farms in their country, Belgian hop growers often have difficulty obtaining approval for certain specific hop protection products, which are certified in other countries. Inagro therefore drafts application files, in close consultation with other European partners. Another service for hop growers is the Inagro laboratory, where the alpha acid level of hops is determined. Quality assurance and promotion Together with vzw HOP and Poperinge, Inagro developed a quality control system for Belgian hops in The system aims at ensuring quality, food safety and traceability during the cultivation, storage and transport of the hops. Inagro supports hop growers in applying the quality manual. In addition, the agency carries out compulsory visual checks on hops, to ensure compliance with European regulations. Over the past few years, many successful efforts have been made to optimize communications with Belgian breweries too. The Belgian hops website and logo are just a few examples of initiatives that are clearly bearing fruit (see further). So, in summary, Inagro provides the hop industry with much more than practical research. Through guidance on crop production and sectorial support, it tries to further the sector in every field - always in close partnership with vzw HOP and the town of Poperinge.

8 Belgian Hops & Belgian beers Belgische bieren = kwaliteit Belgian beers = quality Belgische bieren staan wereldwijd bekend om hun kwaliteit en diversiteit, getuige hiervan de vele onderscheidingen die ze halen op internationaal gerenommeerde wedstrijden. De consument waardeert de Belgische bieren om hun diversiteit, zowel qua aanbod, aroma als smaak. En laat ons eerlijk zijn: de consument heeft gelijk! Belgische bieren behoren tot de beste ter wereld. Dit is vanzelfsprekend de grote verdienste van de Belgische brouwers die hun vakkennis aanwenden om excellente bieren te brouwen. Maar uiteraard beschikken onze brouwers ook over uitstekende lokale basisingrediënten. Hop, bijvoorbeeld. Poperinge: centrum van de hop Eén van de belangrijkste grondstoffen bij de productie van bier is hop. Het gebruik van hop bij het brouwproces heeft een invloed op de bitterheid, het aroma, de smaak en de bewaring van bier. Reeds eeuwenlang wordt in België hop geteeld. Waar de teelt vroeger nog geografisch gespreid gebeurde, met als kernen de regio s Aalst-Asse en Poperinge, concentreert de Belgische hopteelt zich nu voornamelijk rond het West-Vlaamse Poperinge. Werken aan kwaliteit Alle hop in België wordt geteeld op familiebedrijven die reeds generaties lang met veel liefde en vakkennis hop verbouwen. Hierdoor voelt de teler zich persoonlijk betrokken bij zijn eigen product en is hij terecht fier op het resultaat: Belgische kwaliteitshop. Deze goede kwaliteit is het resultaat van een met zorg uitgevoerde teelt, waarbij kwaliteit steeds als belangrijkste aandachtspunt wordt beschouwd. De Belgische kwaliteitskeuring en het kwaliteitszorgsysteem Belgische Hop leveren maximale garanties voor kwaliteit, voedselveiligheid en traceerbaarheid tijdens de teelt, de bewaring en het transport van de hop. Sinds 2010 zijn ook de hophandel en hopverwerking opgenomen in de sectorgids AGF handel en verwerking. Aan de hand van de etikettering van hopbellen en hoppellets kan elke verpakking perfect getraceerd worden tot bij de oorsprong. Met heerlijke bieren als resultaat. Belgian beers are loved around the world for their quality and diversity, as proven by the many awards received in internationally acclaimed competitions. Consumers appreciate Belgian beers on account of their diversity in the product range, the flavour as well as the taste. And let s be honest: they re right, aren t they? Our Belgian beer brewers are amongst the best in the world. Thanks to their many years experience and expertise in brewing excellent beers. And, on top of that, thanks to the excellent local ingredients they have at their disposal, like Belgian hops. Poperinge: the center of hops Hop is one of the key ingredients of beer. The choice of hops used in the brewing process impacts the beer s bitterness, its aroma, its taste and its storage possibilities. Hops have been cultivated in Belgium for centuries. While hop farms were spread geographically around the country, with the regions of Aalst-Asse and Poperinge as the main hubs, they are mainly concentrated around the town of Poperinge, West-Flanders, these days. Working hard on quality All Belgian hops are grown in family businesses, where the plant has been treated with love, care and expertise over many generations. Hop farmers are therefore truly devoted to their products and are rightly proud of the results of their efforts: high-quality, Belgian hops. This excellent quality is the result of a dedicated cultivation process where quality is key. The Belgian quality control and the Belgian Hops quality care system ensure quality, food safety and traceability during the cultivation, storage and transport of hops. Since 2010, hops trading and processing have been included in the sector guide for AGF companies (Potatoes, Vegetables and Fruit)/trading and processing. The labels attached to the hop bells and hop pellets allow every packaging to be perfectly traced back to its origin. 9 More than 50% Belgian hops? That deserves a quality label! Logo Belgische Hop verdient vertrouwen Om de Belgische hop nog beter te promoten, lanceerden de VLAM en de vzw HOP het logo Belgische hop. Brouwerijen die minstens 50% Belgische hop gebruiken bij het brouwen van hun kwaliteitsbier, kunnen dit met het logo extra in de verf zetten. Sinds de introductie van het logo in 2011 werd het al voor meer dan 200 verschillende bieren aangevraagd. Kwaliteit van bij ons! De Poperingse hop kreeg in 2009 een erkenning als streekproduct. Deze erkenning impliceert dat brouwerijen op het etiket van hun bierflessen Gebrouwen met Poperingse hop mogen vermelden. Op voorwaarde uiteraard dat Poperingse hop wordt gebruikt bij de productie. Erkent de brouwer officieel dat minstens de helft van de gebruikte hop van Belgische oorsprong is, dan kan hij het logo Belgische hop aanvragen bij de vzw HOP. De aanwezigheid van de Belgische hop wordt steekproefsgewijs gecontroleerd door een onafhankelijke keuringsinstelling. Drie P s voor duurzaam ondernemen Brouwers die Belgische hop gebruiken en dat met trots etaleren op de bieretiketten laten de bierdrinker zien dat ze een bier produceren met kwaliteitsvolle hop uit eigen streek. Met aandacht voor de drie basisbegrippen van duurzaam ondernemen: Profit: economische duurzaamheid voor zowel de hoptelers als de brouwerijen Planet: reductie van de milieubelasting bij de teelt (verminderd gebruik van gewasbeschermingsmiddelen door geleide bestrijding van ziekten en plagen) en bij de afzet (grondstoffentransport wordt tot een minimum herleid met een lage CO 2 - voetafdruk als gevolg) People: steunen van een kleine sector die zich steeds dynamischer opstelt door onder andere de reconversie naar aromatische rassen In 2011, the VLAM (Flanders Agricultural Marketing Board) and the non-profit organization vzw HOP introduced the Belgian hops logo, with the aim of helping promote Belgian hops. The label further highlights that they adhere to the three basic concepts of sustainable entrepreneurship: Profit: boost economic sustainability, both for hop growers and for breweries Planet: foster eco-friendlier cultivation (less use of crop protection products, by applying controlled crop protection systems to control diseases and plagues) and trading (transport of raw materials is reduced to the max, resulting in a lower carbon footprint) People: support a small, yet increasingly dynamic sector (dynamism is reflected in, e.g., a migration to more aromatic hop varieties)

10 Dirk naudts Proefbouwerij Single Hop Technology -project: een efficiënt instrument om hopkwaliteiten te evalueren Single Hop Technology project: an efficient tool to evaluate hop qualities In 2010 startte de proef brouwerij uit Lochristi samen met KaHo Sint-Lieven en hopprofessor Denis De Keukeleire een ambitieus proefproject op rond hop: het Single Hop Technology -project. Met de steun van het IWT bestudeerden ze drie jaar lang hop tijdens de verwerking (drogen, pelleteren en bewaren) en tijdens de productie van bier. Ook de sensorische eigenschappen (smaak en smaakevolutie) van hop werden onder de loep genomen. Wereldexperts De proef brouwerij werd opgericht in 1996 met als missie bier te ontwikkelen en te brouwen voor derden. Om beter inzicht te krijgen in de vele facetten van hop en zijn toepassing in bier -, sloeg de proef brouwerij de handen in elkaar met twee experts. De gerenommeerde professor De Keukeleire is een wereldautoriteit in de chemie en de toepassingen van hop. De afdeling EFBT (Enzym-, Fermentatie- en Brouwerijtechnologie) van KaHo Sint-Lieven heeft ontzettend veel ervaring met analytische technieken voor allerlei aspecten van hop als grondstof voor de bierbereiding. 20 variëteiten Samen screenden de drie partners drie oogstjaren lang 20 verschillende Noord-Amerikaanse en Europese hopvariëteiten. Met alle variëteiten werden elk jaar opnieuw single-hop bieren gebrouwen. Aan de hand van het onderzoek kregen ze een beter inzicht in de sensorische kwaliteiten van deze geselecteerde hopvariëteiten. Daarnaast konden ze ook een aantal protocollen ontwikkelen om andere hopvariëteiten sneller te evalueren en in te schatten in hoeverre die soorten kunnen worden gebruikt voor bierproductie. De tussentijdse resultaten van het project In 2010, the proef brewery (test brewery) located in Lochristi (Belgium), KaHo Sint-Lieven Technology Campus (Ghent) and hop professor Denis De Keukeleire launched a lofty research project centered around hops: the Single Hop Technology project. With the support of IWT (the Flemish Agency for Innovation by Science and Technology), they studied hops during their processing (drying, pelletizing and storage) and during beer production and explored their sensory characteristics (evolution of taste and flavour). To gain better insight into the many aspects of hops and their application in beer, the proef brewery joined forces with two experts. Professor De Keukeleire is a world authority on the chemistry and applications of hops. The EFBT department (Enzyme, Fermentation and Brewing Technology) of KaHo Sint-Lieven has extensive experience in analytical techniques on various aspects of hops with respect to beer-making. 20 varieties Between them, the three research partners screened 20 different hop varieties, both from the United States and from Europe, over three harvest years. Each year, new single hop beers were brewed using all varieties. The trials led to a better understanding of the selected hop varieties (sensory qualities) and a series of protocols to faster assess other hop varieties and how they can be used in beer-making. 11 werden in 2012 als teaser voorgesteld op het tweejaarlijks internationaal symposium Trends in Brewing aan de KaHo Sint-Lieven in 2012 en op de European Brewery Convention in Luxemburg, eerder dit jaar. In 2014 wordt een volledig rapport gepubliceerd. Kwaliteit van Belgische hop Dat de proef brouwerij gelooft in de kwaliteit van Belgische hop, wordt geïllustreerd door de recente aanleg van 2 hectare hop uitsluitend voor gebruik in de proef brouwerij. De onderzoekspartners hopen met de resultaten ook andere Belgische brouwers en hoptelers grondig te kunnen informeren over alle aspecten van Belgische hop. Single Hop Science: andere variëteiten In de schaduw van het Single Hop Technology -project ontstond het SHS (Single Hop Science)-deelproject, waarbij regelmatig andere (nieuwe of bestaande) hopvariëteiten werden onderzocht, naast de 20 soorten die het hoofdproject onder de loep nam. Zo werd op kleine schaal (1000 liter) een reeks single-hopbieren gebrouwen met de hopsoorten Belma, Savinjski Golding, Celeia, Aurora, Bobek, Mandarina Bavaria en de in België geteelde variëteiten Saphir en (vanaf half augustus) Merkur, Target, East Kent Goldings en Challenger. Het recept is altijd identiek, enkel de hop is verschillend. Er wordt geen rekening gehouden met de bitterwaarde en er wordt telkens evenveel hop gedoseerd in het kookproces (400 gr/hl) en in dry hopping gedurende de bierrijping (400 gr/hl). Hierdoor ontstaan, in bepaalde gevallen, vrij extreme resultaten, maar het is een uitstekende manier om de impact van de hopvariëteit en van de dosering te evalueren. Dankzij dit initiatief kunnen de hoptelers, de bierbrouwers en de consumenten makkelijk verschillende hopvariëteiten sensorisch evalueren om zo de promotie van bepaalde variëteiten te stimuleren. SHS is een unieke gelegenheid om de kwaliteiten van de Belgische hop te onderstrepen. De SHS-bieren zijn in beperkte oplage verkrijgbaar bij Dranken Geers in Oostakker. Single Hop Science: other varieties As a side-initiative of the Single Hop Technology project, the proef brewery and its partners kicked off the SHS (Single Hop Science) project, researching (new or existing) hop varieties other than the 20 types studied in the main research. During the SHS project, a series of single hop beers was brewed on a small scale (1,000 liters) with hop varieties like Belma, Savinjski, Golding, Celeia, Aurora, Bobek, Mandarina Bavaria, as well as varieties grown in Belgium, such as Saphir and (from mid-august 2013 on) Merkur, Target, East Kent Goldings and Challenger. For each trial, the recipe was identical, as was the quantity of hops used in the boiling process (400 gr/hl) and while dry hopping during beer maturation (400 gr/hl). Only the type of hops used was different. Bitter values were not taken into account. The trials often led to fairly extreme results, yet were ideal to evaluate the impact of the hop variety and of the dosing. The SHS initiative is a great way of helping hop growers, beer brewers and consumers easily evaluate the sensorial characteristics of hops and, as such, stimulate the promotion of certain types. It further underlines the qualities of the Belgian hops. The SHS beers (limited editions!) are available at Dranken Geers, Oostakker near Gent. Quality Proefbouwerij Controle en certificering van hop(producten): een must in de EU Economische harmonisering is een van de doelstellingen van de Europese Unie, sinds de oprichting. Om de landbouwproductie binnen Europa te sturen en de markten te stabiliseren, heeft de EU gemeenschappelijke regels ( marktordeningen ) vastgesteld voor de landbouwmarkten. Marktinterventies door de overheid, quotaen steunregelingen, normen voor het in de handel brengen en produceren van landbouwproducten en handel met derde landen: ze worden allemaal door de marktordeningen geregeld. Markt voor hop stabiliseren Sinds 1971 is er een marktordening voor hop, die in de loop der jaren sterk werd afgebouwd. Bij de laatste belangrijke hervorming werd de productiesteun voor hop ontkoppeld en opgenomen in de bedrijfstoeslagregeling. De belangrijkste elementen van de huidige marktordening zijn de regeling voor productcertificering en de centrale rol van producentengroeperingen. Volgens de EU zijn die efficiënte instrumenten om via gezamenlijke actie de markt voor hop te stabiliseren en de kwaliteit van de producten te verbeteren en te garanderen. Kwaliteit door certificering De EU zet in hoge mate in op kwaliteit en gelooft dat certificeringsverplichtingen het kwaliteitsbeleid in de hand werken. Het is in principe verboden producten in de handel te brengen waarvoor geen certificaat kan worden voorgelegd. Ingevoerde producten moeten aan equivalente kwaliteitskenmerken beantwoorden. Concreet moet de hopsector aan volgende regels voldoen: - Op de producten van de hopsector die in de EU worden geoogst of vervaardigd, is een certificeringsprocedure van toepassing - De certificaten mogen slechts worden afgegeven voor producten die voldoen aan minimumkwaliteitskenmerken voor een bepaald handelsstadium - De producten van de hopsector mogen alleen in de handel worden gebracht of uitgevoerd als er een certificaat door de bevoegde entiteit is afgegeven >>> Inspection and certification of hop (products): a must within the EU Economic harmonization has been one of the major objectives of the European Union, ever since its establishment. The EU therefore provides common rules for managing agricultural production within Europe and ensuring stability in the markets: the common market organisation (CMO). Public intervention in the markets, quota and aid schemes, marketing and production standards and trade with third countries: they are all regulated by the common organisation of agricultural markets. Stabilize the market for hops Since 1971, there has been a CMO in hops, which has been run down significantly over the past few years. During the last major reform, financial support for hop growing was decoupled and included in the single payment scheme. The present CMO mainly covers the rules for product certification and the key role of producer groups, which the EU regards as efficient instruments for stabilizing the market for hops and improving and ensuring the quality of the products. Quality through certification The EU sets great store by quality and believes that certification obligations can underpin its quality policy. Products without a certificate are not allowed on the market. Imported products have to meet similar quality characteristics. In concrete terms, the hop sector has to heed the following rules: - Hops harvested or prepared within the EU are subject to a certification procedure - The certificates may only be issued for products having the minimum quality characteristics corresponding to a specific stage of marketing - Hop products may only be marketed or exported if the >>> authorised entity has issued a valid certificate

12 Daarnaast wordt ook bepaald dat alle contracten voor de levering van hop in de EU moeten worden geregistreerd. De regelgeving De basis voor de controles en de certificering van hop en hopproducten is te vinden in de volgende EU Verordeningen en in het besluit van de Vlaamse Regering: - Integrale GMO verordening 1234/2007 van de Raad van 22/10/2007 rond een gemeenschappelijke ordening van de landbouwmarkten en specifieke bepalingen voor een aantal landbouwproducten - Verordening 1850/2006 van de Commissie van 14/12/2006 betreffende de wijze van certificering van hop en hopproducten - Verordening 1295/2008 van de Commissie van 18/12/2008 betreffende de invoer van hop uit derde landen - Besluit van de Vlaamse Regering van 3/12/2010 betreffende de certificering van hop en hopproducten. De kwaliteitscontrole van hop(producten) in Vlaanderen In Vlaanderen is de afdeling Productkwaliteitsbeheer (KWA) van het Agentschap voor Landbouw en Visserij (ALV) bevoegd voor de controle en de certificering van hop en hopproducten. Samen met de vzw HOP, de stad Poperinge, Inagro en de hopproducenten, stelt het KWA alles in het werk om de kwaliteit van de hop en hopproducten zo hoog mogelijk te houden. Al voor de oogst wordt nagegaan of aan alle erkenningsvoorwaarden is voldaan. Na de oogst volgen analyses en productinspectie door de deskundigen van het ALV. Pas dan worden de officiële certificaten uitgereikt. Een overzichtje van de verschillende stappen van registratie tot finale goedkeuring. Registratie en erkenning Elk hopcertificeringscentrum dient jaarlijks een aanvraag tot erkenning in bij het ALV. Een deskundige van het ALV gaat ter plaatse na of aan de erkenningsvoorwaarden is voldaan. Bij het bezoek vult de AVL-expert een erkenningsverslag voor certificering in. Na gunstig advies wordt de erkenning jaarlijks toegediend of hernieuwd. De aanmaak van de documenten gebeurt onder toezicht van de hopambtenaar van de stad Poperinge. In addition, all contracts for the supply of hops in the EU have to be registered. Even before harvesting the crops, compliance with all accreditation and recognition requirements is checked. After the harvest, ALV experts carry out thorough analyses and inspect the products. Only if all the requirements are met will the hop (products) receive an official certificate. An overview of the different steps from registration through to final approval. Registration and recognition Every year, all hop certification institutes have to submit a request for recognition with the ALV. An ALV expert will then inspect, in situ, if the institute meets all the requirements. During the visit, (s)he will fill out an assessment report for certification. After favourable advice, the recognition is granted or renewed each year. All the documents are issued under the watchful eye of Poperinge s hop official. >>> >>> Voorwaarden voor erkenning: - beschikken over een geijkt weegtoestel voor het afwegen van de palen - aanwezigheid van een persinstallatie - aanwezigheid van een adequate vochtigheidsmeter - een fijne weegschaal en zeven indien de bereider de monsters zelf beoordeelt Daarnaast moet het centrum ook een register bijhouden van alle gecertificeerde en niet-gecertificeerde partijen die geperst worden, evenals van de resultaten van de analyses. Analyses op monsters Hopbellen die in de handel worden gebracht, moeten aan een aantal minimumvereisten voldoen rond vochtgehalte (12 14%), het maximumgehalte aan bladeren en stengels (6%), aan hopafval (3-4%) en aan zaden (voor zaadloze hop 2%). Elk certificeringscentrum mag de conformiteit zelf testen aan de hand van representatieve monsters (zoals beschreven in bijlage 2 van de EU verordening 1850/2006), of kan beslissen om de controle uit te besteden aan een onafhankelijk, erkend laboratorium. Vele Vlaamse hoptelers rekenen op Inagro vzw voor de testen. Inagro beschikt immers over een geaccrediteerd labo om bepaalde analyses, zoals het bepalen van de alfazuren, uit te voeren. Controles door keurmeester Daarbovenop controleert de Vlaamse keurmeester nog elke hopteler. Hij meet het vochtgehalte in de geperste balen, controleert de kwaliteit en verifieert steekproefsgewijs het gewicht. Ad random worden een bepaald aantal controlestalen genomen voor onderzoek in het laboratorium van Inagro. Bij verkoop van de hopbellen levert de Vlaamse keurmeester de certificaten af die de hopambtenaar van de Stad Poperinge vooraf heeft opgemaakt. Hij kijkt ter plaatse de laboratoriumuitslag na om te zien of aan de minimumkwaliteitseisen is voldaan en controleert een laatste keer het gewicht en het vochtgehalte. Het kostenplaatje? Het AVL vraagt een certificeringsverplaatsing van 30 EUR. De meeste hoptelers groeperen hun aanvraag tot certificering om kosten te besparen. De vergoedingen, die worden gestort in het Fonds voor Landbouw en Visserij, worden gebruikt om specifieke onderzoeken rond de kwaliteit van hop de financieren. Requirements for recognition: - have a set of calibrated scales to weigh the poles - presence of a pressure system - availability of an adequate moisture gauge - a small scale and sieves if the producer assesses the samples himself In addition, the institute has to keep a register of all the certified and uncertified lots that are pressed, as well as of the analysis results. Analyzing samples All hops that go to market have to meet strict requirements in respect of moisture level (minimal 12 14%) and the presence of leaves and stalks (maximum 6%), of hop waste (3-4%) and of seeds ( 2% for seedless hops). Each certification institute can test the conformity itself in representative samples (as described in annex 2 of the EU Regulation 1850/2006), or can subcontract the quality control to an independent, recognized laboratory. Inagro vzw does the laboratory tests for many of Flanders hop growers, as it has an accredited lab for analyses like alpha acids determination. Checks made by the official inspector In addition, the official Flemish inspector, called the keurmeester, also checks each hop grower s produce: he measures the moisture level in the pressed bales, checks the quality and takes random samples to check the weight. A series of test samples are further examined at the Inagro laboratory. When the hop cones are sold, the Flemish tester will deliver the certificates that Poperinge s hop official has prepared. He will check the laboratory results to verify if all the minimum quality requirements have been fulfilled and do a very last check of weight and moisture level. The cost? The AVL demands a fee of EUR30 for transport. Most hop growers collect their certification requests to save costs. The fees, which are transferred to the Fund for Agriculture and fisheries, are used to finance specific research on the quality of hops.

13 Hopmuseum Poperinge Een interactieve reis door de wereld van hop An interactive journey through the world of hops A beer wall featuring no fewer than 1,400 different beers In het industrieel monument de Stadsschaal, een voormalig keur-, weeg- en perscentrum van hop, bevindt zich het Hopmuseum van Poperinge. De bezoekersomloop slingert zich als een hopplant van zolder tot gelijkvloers. Kijkkasten met historische documenten, authentieke werktuigen, maquettes, foto s en filmpjes brengen meer dan zeven eeuwen hopteelt in beeld. Een boeiende, interactieve ervaring waarin de hopboer, de hoppeplukker, de machinebouwer en de hophandelaar centraal staan. Twee gloednieuwe blikvangers in het centrum van hop en bier zijn de Tentoonstelling Trappist en de Belgische Biermuur. Tentoonstelling Trappist Trappistenbieren worden alom geroemd om hun hoge kwaliteit en rijke smaak. De acht trappistenbrouwerijen behoren tot de top van de brouwerijwereld. Hun ambachtelijkheid, de gedurfde, diepe smaak van het bier en de niet-commerciële aanpak zijn uniek. Wereldwijd zijn er slechts negen trappistenbieren waarvan zes Belgische. Acht trappistenbieren dragen het label Authentic Trappist Product. Poperinge heeft een centrale ligging tussen twee trappistenabdijen: West-Vleteren en Mont des Cats. Hopmuseum Poperinge zoomt dit jaar in op de diverse trappistenbieren en hun geschiedenis. Uiteraard kan dit niet zonder proeven! Belgische Biermuur De collectie Belgische bieren is uniek in Vlaanderen en België. Sedert 1 juli 2013 pronkt het Poperingse Hopmuseum dan ook met een Belgische Biermuur. Aanschouw de lange muur met alle Belgische bieren, de kleurrijke labels, het innovatieve design, de grote biermerken, de smaakvolle streekbieren en de uitzonderlijk moeilijk te verkrijgen bieren. De collectie, die geografisch is samengesteld volgens provincie en brouwerij, is een indrukwekkende 142 meter lang en stelt ruim verschillende biersmaken tentoon. Poperinge s Hop Museum is located at an industrial monument: the old Municipal Scales where hops used to be weighed, approved and stacked. A winding route takes visitors through four floors, from the impressive attic down to the ground floor. Display cabinets containing historic documents, authentic hop tools, scale models, photographs and audiovisual displays illustrate more than seven centuries of hop cultivation a captivating, interactive experience centered around the story of a hop farmer, a hop picker, a machine builder and a hop trader. Just recently, the Hop Museum welcomed two new highlights: the Trappist Exhibition and the Belgian Beer Wall. Expo Trappist Trappist beers are widely acclaimed and world-renowned for their superb quality and rich, full flavour. The eight monasteries that currently brew beer sold as Authentic Trappist Products are at the top of the brewing industry. Their tradition, the adventurous, fullbodied flavour of their beers and their non-profit-making approach are truly unique. In addition to the Authentic Trappist Products, there is one other Trappist beer: that of Mont des Cats. Poperinge is centrally located between the Mont des Cats abbey and that of West-Vleteren. This year, a temporary exhibition at Poperinge s Hop Museum is zooming in on the various Trappist beers and their history. Tasting the beers is, of course, a must when visiting this exhibition. Belgian Beer Wal No other country can boast so many beers as Flanders/Belgium. Since 1 July 2013, you can get to know them at Poperinge s Hop Museum, in the 142-meters-long Belgian Beer Wall. Admire their colorful labels and innovative design and discover all the bigname brands, the flavourful regional beers and the beers that are exceptionally difficult to obtain. The collection, which is sorted according to geography (province and brewery), exhibits no fewer than 1,400 different beers.

14 Toerisme poperinge Poperinge, Hoofdstad van het Goede leven Vlakbij de Franse grens stap je de Hoofdstad van het Goede Leven binnen. In Poperinge bepalen de typische hopranken het zicht langs de rustige wegen. Van hop naar bier is hier maar een kleine stap. In de talrijke volkscafeetjes les je je dorst met een verfrissend streekbier, gebrouwen in één van de drie Poperingse brouwerijen. Ook de paters van West-Vleteren zijn met hun trappistenbier vlakbij. De militaire begraafplaatsen herinneren aan het oorlogsgeweld uit Flirtend met de Belgisch-Franse grens kom je vervolgens in stemmige dorpjes zoals Abele, Watou, Reningelst, Krombeke, Proven, Haringe en Roesbrugge. Poperingse brouwerijen Op het grondgebied van Poperinge vind je drie brouwerijen. In het centrum van Watou is Brouwerij Van Eecke gekend voor o.a. het Poperings Hommelbier, Kapittel Blond en Watou s Wit. Even verderop, richting Abele, maakt Brouwerij Sint-Bernardus blonde en donkere abdijbieren met hop van hun eigen hoppeveld. Brouwerij De Plukker in de Elverdingseweg gebruikt eigen biologische hop om hun Keikoppenbier te maken. En net buiten de stadsgrenzen tref je de Sint-Sixtusabdij met de wereldberoemde trappist van West-Vleteren. Streekgerechten Poperinge, Capital of the Good Life Close to Belgium s border with France, you enter the Capital of the Good Life. Along the quiet roads that surround the town of Poperinge, numerous hop plants are climbing up their netting. It s only a small step from these hops to the region s delicious beers. Poperinge s many traditional pubs and cafés will welcome you to quench your thirst with a refreshing regional beer, brewed in one of Poperinge s three breweries. The monks of West-Vleteren, famous for their Trappist beers, are nearby too. At the same time, the countless military cemeteries remind you of the horrors of World War 1. While hugging the Belgian-French border you will come across charming villages like Abele, Watou, Reningelst, Krombeke, Proven, Haringe and Roesbrugge. Poperinge s breweries Poperinge and its environs are home to three breweries. Located in the centre of Watou, Brouwerij Van Eecke is renowned for Poperings Hommelbier, Kapittel Blond and Watou s Wit, amongst others. Further on, towards Abele, is Brouwerij Sint-Bernardus, where blond and dark abbey beers are brewed with hops from the local hop field. Brouwerij De Plukker in the Elverdingseweg uses its own organic hops to make Keikoppenbier. And just outside the town of Poperinge is the Abbye of Sint-Sixtus, home to the worldrenowned West-Vleteren Trappist. 15 HOPS AND THE SAD REMINDERS OF WWI Talbot House Tijdens de Eerste Wereldoorlog was Poperinge een stad achter het front. De soldaten kwamen naar Pop om te rusten of hun wonden te helen. In het soldatenhuis Talbot House waren alle soldaten ongeacht hun rang welkom om piano te spelen, een boek te lezen, te tuinieren,. In dit levend museum werd veel van het origineel meubilair zoals de piano en het orgel in de kapel bewaard. Stadhuissite en Lijssenthoek Ook de stadhuissite en Lijssenthoek Military Cemetery zijn getuigen van meer dan vier jaar oorlogsgeweld. Op de stadhuissite, met twee dodencellen en een executieplaats, brachten terdoodveroordeelden hun laatste uren door. Op het gehucht Lijssenthoek (Poperinge) was tijdens WO1 het grootste veldhospitaal van de Ieperboog gevestigd. De begraafplaats en het bezoekerscentrum vertellen het verhaal van de mensen achter de statistieken. Je kunt beide sites elke dag gratis bezoeken. Hopmuseum Nog eens herhalen: het Hopmuseum, het centrum van bier en hop, mag niet op het lijstje met Poperingse must-visits ontbreken. Je las meer over dit unieke museum eerder in deze brochure Talbot House During World War I, Poperinge was a town behind the front. Soldiers came to Pop to rest or let their wounds heal. Talbot House tried to be a home from home for all the British soldiers, inviting solders of whatever rank to play the piano, read a book or work in the garden. In this living museum, a lot of original furniture, such as the piano and the organ in the chapel, have been successfully preserved. Town hall site and Lijssenthoek The town hall site and Lijssenthoek Military Cemetery too, testify to over four centuries of waging war. At the town hall site, which features two death-row cells and an execution pole, condemned prisoners passed their final hours before their execution. The hamlet of Lijssenthoek (Poperinge) featured the largest field hospital in the Ypres Salient, during WWI. The cemetery and the visitors centre tell the story of the people behind the statistics. 16 Hopscheuten / Hop shoots Een culinaire delicatesse A culinary delicacy Hopscheuten waren vroeger voedsel voor het gewone volk, maar werden in de jaren zeventig herontdekt in de betere keuken. Vandaag zijn hopscheuten zowat de duurste groente ter wereld, uitsluitend in klasserestaurants te proeven tussen Kerstmis en Pasen. Hopscheuten zijn de ondergrondse en dus witte scheuten van de hopplant. Dankzij de ontwikkeling van een revolutionair procedé waarbij de wortelblokken 21 dagen in verwarmde grond scheuten laten groeien slaagde De Witte Ranke erin de klassieke oogstperiode van maximum 4 weken (tijdens het voorjaar) uit te breiden tot 4 maanden (van de primeurs net voor Kerstmis, goed voor ca euro per kilo, tot Pasen). Tot op vandaag is dat procedé uniek in de hele wereld, waardoor duizenden gastronomen de betere Belgische en Zuidnederlandse restaurants frequenteren om hopscheuten, in combinatie met andere heerlijke ingrediënten, te degusteren. Unieke creaties Hoe hopscheuten smaken? Ze smaken gewoon naar hopscheuten. Ja, ze hebben een notige smaak, die zelfs refereert naar cichorei en ze zijn zowel vers geplukt als gepocheerd bijzonder lekker. Poperingse en Vlaamse chefs maken steeds meer unieke creaties met hopscheuten als basisingrediënt. Gastronomie en toerisme De vzw Keurbroederschap De Witte Ranke dit jaar precies 30 jaar jong zet zich al decennia in voor de streekgastronomie, met specifieke aandacht voor bieren, hop en hopscheuten. Tegelijk werpt De Witte Ranke zich op als een belangrijke speler op het vlak van toerisme en lokale cultuur. Tweejaarlijks organiseert de vzw een culinaire wedstrijd voor juniorkoks (met hopscheuten als basisingrediënt) en de wedstrijd Beste professionele bierschenker van België. Jaarlijks lokt De Witte Ranke ook 500 tot 800 gastronomen naar Poperinge voor de hopscheutenhappening, een dagarrangement dat het boeiende verhaal van de hop en de hopscheuten in geuren, kleuren en smaken brengt. Considered poor man s asparagus in the past, hop shoots were rediscovered in the seventies and steadily gained in popularity among gourmets. Today, hop shoots are about the most expensive vegetable in the world, to be enjoyed in top restaurants between Christmas and Easter. Hop shoots are white shoots which grow slowly in the underground portion of the hop plant. To extend the traditionally short harvesting period of hop shoots (in spring), the Keurbroederschap De Witte Ranke (Fraternity of the White Hop Vine) developed a revolutionary growing procedure: hop shoots are grown in heated soil and are ready in 21 days. Thanks to this new approach, the hop shoots season has been expanded from four weeks to four months (from the primeurs just before Christmas, worth ca. EUR 1,000 per kilo, through to Easter). As the cultivation process is unique in the world, thousands of gourmands visit Belgian and South-Holland s top restaurants to taste hop shoots, combined with other delicious ingredients. Unique creations The taste of hop shoots? Well, they taste just like hop shoots: quite distinctive, in fact. Their taste is best described as nutty with a hint of chicory and certainly is delicious, whether the shoots are eaten raw or poached. An growing number of chefs from Poperinge and the broader Flemish region prepare unique dishes with hop shoots as the basic ingredient. Gastronomy and tourism The vzw Keurbroederschap De Witte Ranke was established 30 years ago to promote the interests of regional gastronomy, with a focus on beer, hops and hop shoots. De Witte Ranke also plays a key role in the local tourism and culture. Every two years, it organizes a culinary competition for junior cooks (with hop shoots as the key ingredient) and the competition Belgian s most professional beer tapper. During its annual Hop Shoots Festival, 500 to 800 gourmets visit Poperinge to explore the world of hops and hop shoots in all its flavours, colours and and tastes. Hop shoots are a culinary delicacy
